Mango Salsa
1 ripe mango cubed
2 t lime juice
2T chopped cilantro
1/2 jalapeno seeded diced fine
1/4 red pepper seeded diced fine
2 green onions chopped fine

This is a rough recipe, feel free to add more or less of any of them. The juice will keep it fresh longer and helps to blend the flavors together. Just mix and, if you, can let sit covered in the refrigerator for a few hours before serving.

Meatballs
1 lb. ground Turkey (lean)
1 pound chicken sausage (italian)
1 egg
1/4 - 1/2 c. of almond meal/flour
lots of oregano, garlic, minced onion, pepper and salt if you use it
Mix these by hand and make meatballs (mine were like tennis balls) then stack in crockpot.




Sauce:
1 14.5 oz can of diced tomatoes
1 can tomato paste
hand full of torn basil leaves- fresh
3 cloves of garlic
salt, pepper, more oregano, pinch of cayenne, onion powder
Mix these together and spread over meat. cook at least 6 hrs on low, watch after 8 hrs -you may need to add water to keep the sauce/meat moist.
Serve over zucchini pasta or eggplant stacks or any other vegi you want.

French toast w/ caramelized banana
1 egg
dash of cinnamon
4 slices of banana bread
canola spray
1 banana
Maple syrup to taste

Spray pan, whip egg and cinnamon together in a bowl. Dip bread in egg coating all sides. Fry in pan till both sides are brown. Cut banana lengthwise and in half. put all 4 pieces in hot pan and cook till brown on both sides, turning as needed. Serve toast with caramelized banana and syrup. You could also serve this with bacon or sausage.



Mango Ice Cream
1 ripe mango flesh removed from pith and skin
1/2cup ice cubes
1/2 cup coconut milk
2 t honey

Put all items in the Vitamix in given order process on variable to 10 then High until sound changes and mixture hardens to soft serve. Serve immediately, Enjoy!

Yogurt and Berries (serves one)

1/2 c. your favorite yogurt ( I used Greek plain)
1/4 c. frozen berries thawed
1 1/2t Honey

Either mix honey into yogurt or squeeze on top, top with berries enjoy.

Stuffed Peppers

1 lb ground turkey
1/2 lb turkey sausage (like Italian)
1 egg
1/4 c. almond meal
seasonings to taste (oregano, salt/pepper, garlic, minced onion)
3 bell Peppers any color
Favorite Marinara (I like Trader Joe's huge can-all good stuff)

Mix meats and next 3 ingredients and stuff into Peppers that have been seeded and cut in half. Arrange in casserole dish. Bake for 45min.-1 hr. @ 350 degrees. Top with your favorite Marinara (heated) and fresh basil leaves.
